Homogeneity may be the friend of Big Ag but it’s the enemy of sustainable farming. How exciting would it be to walk into your farmers market and see over 500 varieties of cabbage? Can you even imagine 285 types of cucumbers? Would you ever get sick of lettuce if you could choose from nearly 500 different kinds?
