Yes, it is totally 1000% possible to make gingerbread cookies without cinnamon. Just add a little extra ginger and/or cloves. Hell, sub a teaspoon or two of hot chocolate mix in for the cinnamon if you’re into chocolate, or a teaspoon or orange or lemon zest for a citrusy note if that’s how you roll. Play around and experiment and make the recipe yours. That’s one of the greatest joys of cooking.
